Brewing Methods

The same bean can taste completely different depending on how you brew it. Here are our favourite methods.

Hario V60 Pour Over

The pour over method extracts a clean, nuanced cup that highlights the terroir of single-origin coffees. Patience is the key ingredient.

  1. Rinse your paper filter with hot water to remove papery taste.
  2. Add 15g of medium-ground coffee. Tap to level the bed.
  3. Start timer. Pour 30ml of water for a 30-second bloom.
  4. Pour in steady circles to 150ml at 0:30, then 250ml at 1:30.
  5. Allow to drain completely. Total brew time: 3:00–3:30.

AeroPress Inverted

The inverted AeroPress method gives you complete control over steep time, resulting in a rich, full-bodied brew with low acidity.

  1. Set AeroPress inverted (plunger down, chamber up).
  2. Add 18g of fine-medium ground coffee.
  3. Pour all 200ml of water. Stir 10 times vigorously.
  4. Attach filter cap. Steep for 1:30 minutes.
  5. Flip carefully onto your mug and press for 30 seconds.

Overnight Cold Brew

Cold brew extracts sweetness and body while leaving bitterness behind. The result is a naturally sweet, chocolatey concentrate.

  1. Coarsely grind 100g of coffee (like raw sugar texture).
  2. Combine coffee and cold filtered water in a jar. Stir well.
  3. Cover and refrigerate for 16–18 hours.
  4. Strain through a fine mesh filter or cheesecloth.
  5. Dilute 1:1 with cold water or milk before serving over ice.

Espresso Dialling In

Espresso is the most technical brew method. Small changes in grind size create dramatically different results in the cup.

  1. Flush your group head with hot water before dosing.
  2. Dose 18g. Distribute evenly and tamp with 15–20kg pressure.
  3. Lock in portafilter. Start timer and begin extraction.
  4. First drops should appear at 7–10 seconds.
  5. Stop at 36g yield (28–32s). Adjust grind if outside range.

Roast Profiles

We roast light to medium-light. We believe high-quality green coffee should express itself, not be masked by roast character.
